Joe's Stone Crab Key Lime Pie--You ROCK!

I realize that the lime zest looks funky in this picture. I swear that it's lime and not seaweed or mold!!
My fella has been begging for Key Lime Pie, so I decided to surprise him by making a homemade version. After searching various recipes, I decided to go with the one from Joe's Stone Crab. You can find it here http://www.joesstonecrab.com/recipes/keylime.html

I was thrilled with the way it turned out, as was he, because it disappeared very quickly. I do not recommend using packaged pie crusts, as mine came out all smashed. But the pre-made crust was cheaper than a box of graham crackers, so cheapness wins out. I had to end up breaking it into crumbs and mixing in some melted butter to reshape the crust.

Overall, a very simple recipe (except for the zesting of the limes) and ridiculously delicious! The whipped topping is also fantastic and great to make, especially if you have a Kitchenaid mixer.
