Winter is creeping into Chicago and I'm cold. I'm always cold, but that is beside the point. When a chill hits the air, I want soup that is comforting, warm and filling. This delicious chili recipe is super easy and ready in about 30 minutes. Seriously, if you can chop one onion and one jalapeno, you can make this. That is, unless you have some difficulty with opening tin cans.
The World's Easiest Veggie (Or Not) Chili
-1 bag soy crumbles (I prefer Morningstar) OR 1 pound ground beef/turkey
-1 large onion, chopped
-1 jalapeno, finely chopped
-1 can black beans
-1 can Great Northern beans
-1 can baked beans
-1 can chopped tomatoes
-1 small can tomato paste
-veggie broth OR water for liquid
-1 tsp. chili powder
-1 tsp. ground cumin
-1/2 tsp. mixed herbs/spices
-2 cloves garlic, finely chopped
-salt to taste
Chop the onion and jalapeno. Combine all ingredients in a large pan and simmer for 30 minutes, stirring frequently. **If you use real meat instead of soy crumbles, brown it before adding any other ingredients.
