Cilantro Lime Cole Slaw

One of my friends is a fellower gardener and crafter.  She and her boyfriend recently had the opportunity to move to Pennsylvania to start an organic CSA farm.  Although I will miss having her here in Chicago, I'm excited for them to begin this great food adventure.  It was only appropriate to have a going away party that revolved around food and friends.

I wanted to bring a dish made out of my garden's produce, but it had to be suitable for brunch.  There was one cabbage left in my fridge and I had just picked up a copy of Food Network's magazine.  Lo and behold, I found this recipe inside and decided that a cilantro and lime cole slaw sounded like the winner.  I was able to use my own cilantro and cabbage for the recipe.  It filled a 9" x 13" pan, which I brought home completely empty.  I'm calling this one a winner. 

For the best flavor, make it the night before and let it sit in the fridge.  Delicious!
